Hello friends!!

As many of you may know, not only do I enjoy EATING- but I also love MAKING my own food and recipes! I’ve been cooking and baking since I was little, and I must say- my friends and family are generally pleasantly surprised with the results!

Cooking has somewhat become second nature to me. I don’t really follow a strict recipe and I kind of create as I go! I know that’s kind of scary for some people, but the truth is- everyone has different tastes and preferences, so who am I to dictate just exactly how much of a flavor or ingredient you want??? So feel free to taste as you go and add as you please!

Cooking should be a FUN EXPERIENCE! Unlike baking (where sticking to a recipe is key), it’s very rare to MESS UP and ruin something completely while cooking- if you add too much of one thing, you can always even it out by adding more of the other ingredients! #proportions

I also enjoy taking an existing food and figuring out how to make it healthier, without compromising the flavor and taste! My pesto is dairy free and uses half the oil of traditional pesto sauces, but is still creamy, delicious and only takes about 5 minutes to make!


3 bundles of fresh pesto leaves

1/4 cup roasted pine nuts

2 cloves raw garlic

1/2 lemon

1 tablespoon olive oil

1 tablespoon water

1/2 teaspoon black pepper

1/4 teaspoon sea salt


Pulse the pine nuts and garlic gloves in the food processor or blender for about 10 seconds, until a grainy paste.

Add the 3 bundles of fresh basil leaves and continue to mix for about 20 seconds, while slowly drizzling in 1 tablespoon of olive oil.

Scrape down the sides of the bowl and add the juice of half a lemon.  Add salt and pepper to taste.

Continue to mix for about 10 seconds, while drizzling in a tablespoon of water.

VOILA!!! now you have a healthy fresh pesto- ready to be used as a dip, marinade,  or sauce to add little flavor to any dish!!!!
